Penza, 12 July 2013. PenzaNews. Dishes prepared using non-traditional technologies, including the recipes of Japanese, Chinese, Korean, Thai and other ethnic cuisines, which are offered in public catering establishments of the Penza region, do not meet the safety requirements for microbiological indicators almost in half of the cases. This was stated by the press service of the Russian Federal Service for Customer Supervision in the Penza region on Friday, July 12.

The department explained that this type of food has a number of features.

“Among them is the use of raw food of animal and plant origin (flying fish roe, seaweed, spices) non-traditional for Russia, the use of non-typical processing technologies, a large number of spices. These dishes are popular in many countries around the world, but abroad, they are made only in the restaurants and sold directly at the request of the customer, while in our country, these products are sold through trade organization,” the press service noted.

The department stated that during the inspection of places manufacturing non-traditional cuisine, a number of violations were registered, including lack of technical standards for products and the required set of production facilities, failure to comply with sanitary and disinfection requirements, as well as absence of necessary medical examination of some people involved in the manufacturing process.

“The customer must be informed about the product, precisely about the name and address of the manufacturer, the net weight, the composition of the product, additives, flavorings and other ingredients, nutritional value, date of manufacture and packaging, storage timeframe, as well as information about GMO content,” the Russian Federal Service for Customer Supervision stressed.
